A Technical Guide for the Management of Seafood Smoking Operations

 

Seafish are in the process of developing the above Technical Guide. The Technical Guide is described as a "Science-rich product that is firmly anchored in the best practices and traditions of seafood smoking in the UK" .

In reality this means that the Guide will contain:

  • Food Science - seafood smoking
  • Manufacturing Technology – Seafood Smoking
  • Food Safety and Quality – Seafood Smoking
    • including HACCP Plans
  • Introductory Level Training Course
  • Advanced Level Training Course
  • Training DVD

Seafish are looking for individuals and businesses that want to contribute to the development of this new style of training product. So if you are a potential author and want to write some of the content, or a smoking business and you want to make sure they cover your type of operation then why not email academy@seafish.co.uk and tell them. Seafish are also looking for Seafood Smoking Trainers.
