Seafood smoking technical guide to be developed

Seafish has started work to develop a new seafood smoking training guide. The Technical Guide for Seafood Smoking Operations is aimed at managers of seafood smoking businesses and will include an in depth treatment of the science behind seafood smoking. The guide will continue with a detailed review of the practices and technology in use by UK seafood smoking companies before concluding with both the theory and practice of food safety as it applies to these operations. In support of the guide, Seafish is developing a DVD, an advanced practical training course and a shorter course suitable for in-company delivery.

Writing such a comprehensive guide is no small task and Seafish is currently assembling a small team of authors and contributors, and is seeking other contributions from experts and businesses in this field. A draft outline of the content and more details are available in pdf form here. If you are a potential author or perhaps you want to ensure your approach to smoking is covered by the guide, then please get in touch by emailing academy@seafish.co.uk

Bivalve Purification Training Courses - update

Since writing about the pilot course in the November edition of Training Talk, work has continued. Seafish has applied to the Royal Environmental Health Institute for Scotland for recognition of the short course An Introduction to Bivalve Purification Operations. The application will be considered during February and, if successful, Seafish expects to be able to deliver courses starting in April 2008.

The search is now on for suitable trainers to deliver this and other Seafish and Academy approved courses. The main criteria for approval as a trainer are detailed later in this article. Approved trainers will be able to deliver the Introductory course.

Seafood merger talks within the National Skills Academy for Food Manufacturing

The National Skills Academy for Food Manufacturing (NSA) received a boost in November with the first meeting of all eight Academy Training Centres. Within the NSA there are two seafood Academy Training Centres. These are the Grimsby Institute for Food and Fisheries (GIFF) and the Seafood Training Academy.

In a move designed to reduce confusion and improve the services available to the seafood industry, both seafood academies are actively working towards a merger in early 2008. The enlarged Seafood Training Academy, with the resources of GIFF, Seafish and the other academy partners, will be ideally placed to deliver a quality service to UK seafood businesses.

How to become an approved trainer

The Seafood Training Academy has established a route to becoming an approved trainer. As the Seafood Academy expands the number of courses and programmes it delivers, the greater a number of independent trainers will be required. The criteria for approval are simple and are designed to ensure that courses are delivered by people with the right qualifications and experience. More detail is on the website, but in brief they are:
• Significant relevant experience - usually at least two years in an appropriate part of the seafood industry;
• Advanced Technical Qualification – where a suitable advanced qualification does not exist, Seafish will develop and accredit such a course;
• Professional Training Qualification – or a suitable teaching qualification;
• Suitable training resources – The Seafood Training Academy will provide the course materials etc to deliver.
